Meet the Baker, Chelsie Herje
Chelsie Herje is the owner and operator of Salty Roan Bakehouse. She was raised on a dairy farm in Kansas where she grew up baking with her mom, learning the traditions and techniques that would shape her future. After marrying Bart Herje and becoming a mom to four kids, Chelsie fell in love with homemade bread while baking for her family. Wanting to bring good quality bread and pastry to the big country, she opened Salty Roan Bakehouse in October of 2017. Chelsie attended the San Francisco Baking Institute where she learned the art of viennoiserie and artisan bread, bringing that expertise home to Abilene.

Salty Roan Bakehouse is an upscale bakery and coffee house specializing in classic French pastries, artisan breads, and unique desserts. Everything we create is handcrafted in house by our skilled bakers using quality ingredients and time-honored techniques. We believe in doing things right, which means no shortcuts and no compromises when it comes to our products. Sweet or savory, rich or bright, we craft each item with care and attention to detail. Our passion for baking shows in every croissant, every loaf of bread, and every custom creation we make for our customers.

Our cafe offers lots of places to work or chat with friends over exceptional coffee and baked goods. We designed our space to be welcoming and comfortable, whether you're settling in for the morning or stopping by for an afternoon treat. For those on-the-go days, our drive-thru makes it easy to grab your favorites without slowing down. Now in our new Abilene location, we're excited to share our love of baking with you and serve the big country community.
